Both sweet wines are from late harvested fruit. To achieve high sugar levels naturally, the grapes are left on the vine for a period beyond the normal harvest time, sometimes up to 4 weeks later in the season. The sugar, acids and flavours present in the berries are concentrated, making the grapes more suitable for the sweeter styles.
